- 1 cup chopped tomatoes
- ½ cup chopped red pepper
- 1 finely chopped jalapeno pepper
- 1 can of rinsed and drained kidney beans or black beans
- 1 cup thawed, frozen corn
- 4 thinly sliced green onions
- ¼ cup diced red onion

- ½ cup olive oil
- ½ cup lime juice
