BLUEBERRIES
Blueberries are high in antioxidants, as berries have more antioxidants than any other fruits or vegetables.
LEMON JUICE

CHIA SEEDS
Chia seeds contain quercetin, an antioxidant that can reduce your risk of developing several health conditions, including heart disease. The seeds also high in fiber, which can help to lower high blood pressure and, in turn, reduce your risk of developing heart disease.
UNSWEETENED ALMOND MILK
Unsweetened almond milk contains up to 80% fewer calories than regular dairy milk. Using it as a replacement for cow's milk could be an effective weight loss strategy.
COCONUT MILK
Coconut milk is a tasty, nutritious and versatile food that is widely available. It can also be made easily at home. It's full of important nutrients like manganese and copper.
APPLE JUICE
Apple juice is completely free of calories and fat and can lower cholesterol. A glass of apple juice is packed with various essential nutrients like vitamin A, vitamin C, Vitamin E, vitamin K and folate.
ALMOND BUTTER
Almond butter is high in monounsaturated fats. Monounsaturated fats help to lower LDL (“bad”) cholesterol and raise HDL (“good”) cholesterol.
Ingredients
1 cup Frozen Blueberries
1 Tbsp Lemon Juice
1 Tbsp Chia seeds
1 cup unsweetened almond milk
1/2 cup light coconut milk
1 Tbsp Apple Nectar or Agave
3 Tbsp Almond Butter
1/2 Cup Chia seeds

Directions
In a small Sauce pan add the blueberries and Lemon juice. Warm on medium-high heat until bubbling. Then lower heat to medium and cook for 1-2 minutes - stirring occasionally.
Remove from heat then stir in chia seeds.
Divide the Jam between 2 small serving dishes ,and set in the refrigerator to chill.
Now, add almond and coconut milk, almond butter & sweetener to Vitamix.
Blend on high to combine.
Add chia seeds and pulse a few times to mix being careful not to blend, you want the chia seeds left whole.Transfer to a bowl and let chill for roughly 10 minutes.
Divide the pudding evenly between the 2 dishes. Cover and let chill for at least 1-2 hours.
To serve, top with extra almond butter and fresh blueberries.
