Ingredients
1 pound Diced Boneless Chicken Breasts or Thighs
1 large Onion, cut into quarters

2 Tablespoons BlenditUp Thai Curry Spice Blend
2 Tablespoons Olive Oil
2 Cups Coconut Milk
1 large Potato, cubed
Directions
Saute 1 large quartered Onion in the 2 Tablespoons Olive Oil & 2 Tablespoons BlenditUp Thai Curry Spice Blend
Add 1 pound diced chicken & saute until brown.
Add 1 large cubed Potato & 2 Cups Coconut Milk
Bring to a boil and simmer until cooked and potato is tender.
Serve with Rice.
